Tasting Note

Deep ruby with garnet rim. Aromas of macerated cherry, plum, dried rose, menthol, leather, licorice and spicy tobacco; mineral and balsamic hints. Full-bodied, silky yet powerful, with firm, evolving tannins and a very long, liquorice-tinged finish.

Food Pairing

Western: braised beef, osso buco, short ribs, aged Parmigiano-Reggiano, mushroom risotto. Asian: Peking duck, Cantonese roasted pork (char siu), Korean bulgogi or galbi, rich Sichuan-style braised beef.

Production Method

Hand-harvested Nebbiolo; extended skin maceration (~30 days) with indigenous yeasts; aged in large Slavonian oak casks (≈35 hL) for ~33 months, followed by prolonged bottle aging (total cellar time ~9 years) before release.
