Tasting Note
Deep dark-berry and blueberry fruit with black olive, leather, pepper and smoked-granite minerality; fresh acidity, fine grippy tannins, layered spice and meaty umami notes. Very long, mineral finish.

Western: grilled lamb, roasted beef, braised short ribs, venison, aged hard cheeses. Asian: Korean BBQ (galbi), char siu, miso-glazed dishes, spicy Sichuan beef, teriyaki beef or yakitori.
Production Method
Hand-harvested, foot-crushed in stone lagars; spontaneous indigenous-yeast fermentation with ~90% whole clusters; aged ~32 months in 2,500L Stockinger foudres and concrete/wood vats; minimal-intervention, sustainable viticulture.
