Tasting Note

Lemon curd, pineapple and pear with saline minerality, subtle toasted oak and crisp citrus acidity. Elegant, medium–full body with fine persistence and a stony finish.

Western: grilled scallops, buttered lobster, roast chicken, creamy pasta, soft cheeses. Asian: sashimi or sushi, tempura prawns, steamed fish with ginger & spring onion, Cantonese poached chicken.


Production Method

Pneumatic pressing, cold settling, fermentation and élevage in French oak (c.25–35% new), malolactic fermentation, minimal bâtonnage; aged ~12 months in barrel.

Domaine Alain Chavy (est. 2003) farms 17 acres in Puligny; family-owned parcels include older vines in Les Champs Gains (planted ~1958–62). Small production and deep underground cellar.
