Tasting Note
Blackberry, raspberry and dark cherry with baking spice, mint and floral perfume. River-pebble minerality, fine searching tannins, medium–full body and a long, dusty-biscuit finish.

Food Pairing
Western: grilled ribeye, roast lamb, beef short ribs, venison stew, braised oxtail. Asian: Korean BBQ (bulgogi/galbi), char siu, spicy Sichuan beef, lamb satay, Malaysian rendang, hoisin duck.

Production Method
Hand-harvested from Block 4. Destemmed with ~50% berries crushed, fermented in concrete with ~22 days maceration. Aged ~10 months in 700L oak (≈22% new). ACO-certified organic viticulture.

Adelina Wines is run by Jennie (Jen) Gardner and Col McBryde from the family estate in Springfarm, Clare Valley; Block 4 was planted in 1915. Small-batch, organic-focused producer with terroir-driven winemaking.
