Tasting Note
Deep amber XO with dried apricot, leather, roasted almond, honey and vanilla on the nose; silky palate of caramelized pear, almond, Oloroso sherry, orange peel and baking spice. Long, warming finish with brown sugar and a hint of sea salt.
Food Pairing
Western: foie gras, roasted duck, aged/blue cheeses, dark chocolate, almond tart. Asian: Peking duck, char siu (Cantonese BBQ pork), miso‑glazed black cod, Cantonese roasted pork belly.
Production Method
Non-vintage XO blend of 25–30 year-old Grande (and some Petite) Champagne eaux-de-vie, predominantly Ugni Blanc, matured in loose-grain Limousin oak casks; older stocks held in glass demijohns.
