Tasting Note
Topaz colour; nose of candied fruits, orange oil, baking spices, beeswax and pronounced rancio. Palate rich and unctuous with figs, sultanas, demerara sugar, mocha, dark chocolate and liquorice; very long, spicy rancio finish.
Food Pairing
Western: dark chocolate, foie gras, blue or aged cheeses, roasted duck, caramel desserts. Asian: Peking duck, char siu (barbecue pork), red-braised pork, miso-glazed aubergine, sesame nougat and other rich Chinese desserts.
Production Method
Double pot distillation in copper stills; 'heart' fractions matured for decades in Limousin oak; blended from multi‑generation Paradis cellar stocks and bottled at 40% in numbered carafes.
