Tasting Note

Bright ruby Spätburgunder: red cherry, wild strawberry, subtle forest-floor and baking spice, fine mineral thread, silky tannins, precise acidity, medium body and a focused, medium-length finish.

Roast duck with cherry sauce; mushroom risotto; roasted pork loin; aged Comté or Gruyère; Asian: Peking duck, char siu (Cantonese BBQ pork), miso-glazed salmon, shiitake & soba noodle dishes.


Production Method

Biodynamic viticulture; 100% hand-harvested; spontaneous fermentation with ~12% whole clusters; traditional maceration; matured ~16–17 months in barriques (≈10% new oak).
