Tasting Note

Bright cherry and sour-cherry fruit with violet florals, forest berry and subtle undergrowth. Silky texture, fine-grained tannins, smoky/mineral undertones and long, spicy finish (minutes).

Western: roast duck, Sauerbraten, mushroom risotto, pork tenderloin, aged soft cheeses. Asian: Peking duck, char siu pork, mushroom and soy-based stir-fries, miso-glazed salmon, teriyaki dishes.


Production Method

Hand-harvested; spontaneous fermentation with substantial whole-cluster fraction (~25–30%); matured in French barriques (c.10–15% new); bottled after extended élevage (May 2023).
