Tasting Note

Bright sour and morello cherries, wild strawberry, herbaceous lovage/juniper, subtle forest-floor minerality, fine tannins, lively acidity and an elegant, silky texture with a long spice-tinged finish.


Food Pairing

Western: roast or confit duck, braised duck leg, grilled portobello mushrooms, smoked venison, roasted pork. Asian: Peking duck, char siu, miso-glazed eggplant, mushroom soba or udon, Korean bulgogi (beef).


Production Method

Selective hand-harvest; spontaneous fermentation with ~10% whole clusters; matured in barrique (≈16 months, ~20% new); bottled May 2023.
