Tasting Note
Bright red cherry and wild strawberry, underbrush and forest-floor notes, chalky minerality, subtle smoke and spice. Silky texture, vibrant acidity and fine astringent tannins with a long, saline, elegant finish.

Western: roast duck, pan-roasted chicken, mushroom risotto, pork tenderloin, grilled salmon. Asian: Peking duck, char siu or Korean bulgogi (pork/beef), miso-glazed salmon, shiitake soba or stir-fried mushrooms with soy/ginger.
