Tasting Note

Elegant, Burgundian-style Pinot: red cherry, raspberry and violet with subtle spice, earth and stony minerality. Silky, fine-grained tannins, lively acidity and a long, saline-tinged finish.


Food Pairing

Western: roast duck, braised rabbit, mushroom risotto with truffle, roasted lamb, aged soft cheeses. Asian: Peking duck, miso-glazed salmon, shiitake stir-fry, char siu, Korean bulgogi or teriyaki chicken.


Production Method

Biodynamic viticulture; 100% hand-harvested; spontaneous fermentations with ~10% whole clusters; matured in barrique (c.10% new) for ~12–18 months.
