Tasting Note
Light, crisp Koshu with citrus (yuzu, lemon), Asian pear, white-peach and saline/mineral notes; subtle stone-smoke and a gently bitter, clean finish. Refreshing acidity and a delicate, short-to-medium finish.

Sashimi and sushi, tempura, grilled or steamed white fish, oysters and ceviche; lemon-herb chicken, green salads, light pasta with citrus, Thai seafood, Vietnamese fresh rolls, mild goat cheeses.
Production Method
Whole-bunch press; stainless-steel fermentation and aged sur lie for ~18 months at ~8°C in large tanks; no sulfites during élevage and ~30 ppm added at racking.
