Tasting Note

Light-bodied, crisp citrus and white-peach fruit with yuzu, pear and saline-mineral undertones; slight herbal/phenolic bite and clean, refreshing finish with subtle umami.

Western: oysters, ceviche, grilled white fish, light salads, roasted chicken, fresh goat cheese. Asian: sashimi/sushi, tempura, lightly grilled mackerel (saba shioyaki), cold soba, miso-marinated fish, steamed shellfish.
