Tasting Note

Pale, delicate Koshu: white peach, yuzu and lime with floral lift, wet-stone minerality and saline, mouthwatering finish. Crisp acidity and light body.


Food Pairing

Western: oysters, ceviche, grilled white fish, lemon pasta, goat cheese salads. Asian: sushi & sashimi, tempura, steamed fish with ginger & scallions, miso-glazed fish, lightly seasoned yakitori and delicate Chinese/Thai seafood dishes.


Production Method

Whole-bunch press, cool stainless-steel fermentation and extended sur-lie aging (several months to ~18 months). Minimal sulfites added at racking; bottled un‑oaked.

98WINEs (winemaker Yuki Hirayama) launched c.2019 in Yamanashi. Burgundian-trained, small-production estate focusing on Koshu and Muscat Bailey A with a natural/minimal-intervention approach.
