Tasting Note

Delicate white peach and stone-fruit with cashew/almond notes, saline minerality and gentle lees texture. Bright acidity, medium body and a clean, savoury finish.


Food Pairing

Sushi, sashimi, tempura, grilled white fish, ceviche, goat cheese, light salads, steamed vegetables, yakitori (chicken skewers), lightly spiced Asian seafood dishes.


Production Method

Primarily stainless-steel fermentation with approx. 10% matured in old oak barrels (about 1 year) and lees contact to add texture; minimal intervention.

98WINEs (Yuki Hirayama) founded 2019 in Koshu, Yamanashi. Hirayama trained in Burgundy and focuses on Koshu and Muscat Bailey A, expressing local terroir near Mt. Fuji.
